A wine from organic, biodynamic cultivation, made from Greco grapes with a small addition of Chardonnay. Cultivated in our vineyards surrounding the small village of Vignoni Alto, in the Val d’Orcia region, the grapes are harvested by hand and whole-bunch soft pressed. Fermentation by indigenous yeasts is done in stainless steel vats at a controlled temperature. The ageing process on fine lees, also in stainless steel vats, takes about five months. Aetos Bianco Toscana is the ideal accompaniment for a variety of fish dishes, white meats, and cheeses.
Red wine made from 100% biological Sangiovese grapes, entirely produced according to the principles of the biodynamic agriculture. The grapes are harvested by hand and fermented using special French cement vats. After the malolactic fermentation in steel vats, the refinement takes place in small oak and tonnaux barrels for 24 months and then in the bottle for a further six months. In total the refinement amounts to at least 30 months.
Sparkling wine from 100% certified-organic Sangiovese grapes, entirely produced in our winery following the principles of biodynamic agriculture.The selected grapes come from the well-exposed Collina vineyard, where vines are trained using the bush training system, and are harvested early by hand to preserve their optimal acidity and freshness. The vinification process involves gentle whole-bunch pressing and alcoholic fermentation process in stainless steel tanks, followed by in-bottle refermentation with a minimum of 24 months on the lees.
Elegant rosé wine made from 100% certified organic and biodynamic Sangiovese grapes, early harvested by hand to ensure acidity and the natural freshness of the wine. The grapes are pressed gently, and fermentation takes place in stainless steel vats with constant monitoring of temperature and oxygen levels. Aged on the lees for at least three months.
