Sparkling wine from 100% certified-organic Sangiovese grapes, entirely produced in our winery following the principles of biodynamic agriculture.
The selected grapes come from the well-exposed Collina vineyard, where vines are trained using the bush training system, and are harvested early by hand to preserve their optimal acidity and freshness. The vinification process involves gentle whole-bunch pressing and alcoholic fermentation process in stainless steel tanks, followed by in-bottle refermentation with a minimum of 24 months on the lees.
